- 1 1/2 cups graham cracker crumbs
- 1/3 cup melted unsalted butter
- 1/4 cup granulated sugar
- 2 cups cream cheese, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1/2 cup peach jam
- 1/2 cup raspberry jam
- Fresh peach slices for topping
- Fresh raspberries for topping
- 1 cup whipped cream
- Powdered sugar for sprinkling
Instructions
- Preheat your oven to 325°F (163°C).
- Mix graham cracker crumbs, melted butter, and sugar in a bowl until combined. Press the mixture firmly into the bottom of a springform pan. Bake for about 10 minutes. Remove and let cool.
- Beat the cream cheese and sugar until smooth and creamy. Add eggs one at a time, mixing well after each addition. Mix in vanilla extract and sour cream until well blended.
- Pour half of the cheesecake mixture over the cooled crust. Arrange peach slices over the top. Pour the remaining cheesecake mixture over the peaches.
- Warm peach and raspberry jams separately until soft. Dollop the jams onto the cheesecake and swirl with a toothpick to create a pattern.
- Bake in the preheated oven for about 40 minutes, or until the cheesecake is mostly set. Turn off the oven and leave the cheesecake inside with the door closed for 1 hour.
- After cooling, refrigerate the cheesecake for at least 4 hours.
- Before serving, top with whipped cream, fresh peach slices, raspberries, and a sprinkle of powdered sugar.
Notes
Make sure the cream cheese is really soft for a smooth mixture. Let the cheesecake cool completely before refrigerating it to avoid condensation.
