A creamy no-bake cheesecake featuring sweet peaches and plums, perfect for summer gatherings.

- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 2 cups sliced fresh peaches
- 2 cups sliced fresh plums
- 1/4 cup peach jelly, melted for drizzling
Instructions
- Prepare the Crust: In a medium bowl, combine graham cracker crumbs with melted butter, mixing until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Refrigerate for at least 30 minutes to set.
- Make the Filling: In a large bowl, beat softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy. In a separate bowl, whip heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
- Assemble the Cheesecake: Pour half of the cream cheese mixture over the chilled crust, spreading it evenly. Arrange a layer of sliced peaches and plums over the cream cheese layer. Spread the remaining cream cheese mixture over the fruit.
- Decorate and Chill: Top the cheesecake with additional peach and plum slices for decoration. Drizzle melted peach jelly over the top. Refrigerate for at least 4 hours or until fully set.
- Serve and Enjoy: Slice and serve chilled with whipped cream, if desired.
Notes
For a firmer cheesecake, chill it longer before serving. You can also substitute with different fruits as desired.
