- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/4 cup plain Greek yogurt
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh peaches, peeled and chopped
- 3/4 cup chopped pecans
- Optional: Turbinado sugar for topping
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Set this mixture aside.
- In a large bowl, cream the softened butter and sugar until light and fluffy.
- Add the eggs, one at a time, beating well after each addition.
- Mix in the Greek yogurt and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring just until combined.
- Gently fold in the chopped peaches and pecans with a spatula.
- Pour the batter into the prepared loaf pan and smooth the top. Sprinkle with turbinado sugar if desired.
- Bake for 55–65 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer the bread to a wire rack to cool completely.
Notes
For best flavor, use ripe peaches and consider adjusting sugar according to preference.
