Description

A delightful bread combining the sweetness of fresh peaches with the crunchiness of pecans, perfect for breakfast, snacks, or dessert.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh peaches, peeled and chopped
  • 3/4 cup chopped pecans
  • Optional: Turbinado sugar for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Set this mixture aside.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy.
  4. Add the eggs, one at a time, beating well after each addition.
  5. Mix in the Greek yogurt and vanilla extract until well combined.
  6. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  7. Gently fold in the chopped peaches and pecans with a spatula.
  8. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle with turbinado sugar if desired.
  9. Bake for 55–65 minutes or until a toothpick inserted in the center comes out clean.
  10. Cool in the pan for 10 minutes, then transfer the bread to a wire rack to cool completely.

Notes

For best flavor, use ripe peaches and consider adjusting sugar according to preference.
