Description

Delightful Peach Crumb Bars with a buttery crumbly base and juicy peach filling.


Ingredients

  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 3 cups all-purpose flour
  • 2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 cup cold unsalted butter, cut into cubes
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 6 cups sliced, peeled fresh peaches
  • 1/3 cup granulated sugar (for filling)
  • 1 1/2 tbsp cornstarch
  • 12 tbsp freshly squeezed lemon juice
  • 1 tsp ground cinnamon (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with foil or parchment paper and lightly spray with non-stick spray.
  2. In a large bowl or using a stand mixer, combine 1 cup sugar, 1 tsp baking powder, 3 cups flour, 2 tsp cinnamon, and 1/2 tsp salt. Add 1 cup cold butter, 1 egg, and 1 tsp vanilla. Beat on low speed until crumbly.
  3. Press a little more than half of the crumbly dough mixture into the bottom of the prepared baking pan.
  4. In a separate bowl, toss sliced peaches with 1/3 cup sugar, 1 1/2 tbsp cornstarch, 1-2 tbsp lemon juice, and 1 tsp cinnamon.
  5. Spread the peach mixture evenly over the crust and crumble the remaining dough over the top.
  6. Bake for about 45 minutes until golden brown.
  7. Cool completely before cutting into squares. Optionally drizzle with icing.

Notes

Use ripe, fresh peaches for the best flavor. You can also add chopped nuts to the crumb topping for extra crunch.
