  • 1/2 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 2 ripe peaches, peeled and thinly sliced
  • 1 tablespoon cornstarch
  • 1 tablespoon brown sugar
  • 1/3 cup all-purpose flour (for streusel)
  • 1/4 cup brown sugar (for streusel)
  • 1/2 teaspoon cinnamon
  • 3 tablespoons unsalted butter, cold and cubed

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8-inch round or square baking pan.
  2. In a bowl, mix together the flour, granulated sugar, baking powder, baking soda, and salt.
  3. Add the softened butter to the dry ingredients and mix until crumbly.
  4. Beat in the egg, sour cream, and vanilla extract until smooth. Spread this mixture into the prepared pan.
  5. In another bowl, beat the cream cheese, sugar, egg, and vanilla until creamy. Spread this over the cake batter.
  6. In a small bowl, toss the sliced peaches with cornstarch and brown sugar. Layer the peaches evenly over the cream cheese.
  7. For the streusel, mix together the flour, brown sugar, cinnamon, and cold, cubed butter. Use a fork to mix until crumbly.
  8. Sprinkle the streusel over the peach layer.
  9. Bake for 40–45 minutes, or until the center is set and the top is golden. Let it cool before serving.

Notes

Serve warm or at room temperature. Pair it with vanilla ice cream or whipped cream for an extra treat.
