- 1/2 cup + 1 tbsp all-purpose flour

- 1 and 1/4 cup + 1 and 1/2 tbsp cake flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 3/8 tsp cinnamon
- 1/8 tsp nutmeg
- Pinch ground cloves
- 1/4 cup salted butter, softened
- 3 tbsp vegetable oil
- 3/4 cup + 2 tbsp granulated sugar
- 1 large egg
- 2 tsp vanilla extract
- 1/4 cup full-fat sour cream
- 1/2 cup milk
- 1/2 cup heavy cream, cold
- 3 tbsp powdered sugar
- 1 and 1/2 tsp vanilla extract
- Pinch of nutmeg
Instructions
- Preheat your oven to 350°F (175°C) and butter a 9-inch cake pan.
- Slice peaches and toss with brown sugar and cinnamon; set aside.
- Lay peach slices in the bottom of the pan.
- To make the crumble, melt butter and mix with flour, brown sugar, salt, and cinnamon.
- For the cake batter, cream butter and oil together. Add sugar, then mix in the egg, sour cream, and vanilla.
- In a separate bowl, mix dry ingredients, then add them to the wet mixture, alternating with milk.
- Pour the batter over the peaches, sprinkle the crumble on top, and bake for 42 to 49 minutes.
- For whipped cream, beat cold heavy cream with powdered sugar and vanilla until stiff peaks form.
- Cool the cake for 10 minutes, then invert onto a plate and serve with whipped cream.
Notes
Serve warm or at room temperature. Store leftovers in an airtight container for 3-4 days. Reheat gently if desired.
