Ingredients

  • 1/4 cup salted butter, melted
  • 1/2 cup + 1 tbsp all-purpose flour
  • 1/4 cup light brown sugar, packed
  • 2 tsp raw sugar (optional)
  • 1/8 tsp salt
  • 1/8 tsp cinnamon
  • 3 medium peaches, sliced
  • 3 tbsp light brown sugar, packed
  • 1/4 tsp cinnamon
  • Pinch of nutmeg
  • 1 and 1/4 cup + 1 and 1/2 tbsp cake flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 3/8 tsp cinnamon
  • 1/8 tsp nutmeg
  • Pinch ground cloves
  • 1/4 cup salted butter, softened
  • 3 tbsp vegetable oil
  • 3/4 cup + 2 tbsp granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1/4 cup full-fat sour cream
  • 1/2 cup milk
  • 1/2 cup heavy cream, cold
  • 3 tbsp powdered sugar
  • 1 and 1/2 tsp vanilla extract
  • Pinch of nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C) and butter a 9-inch cake pan.
  2. Slice peaches and toss with brown sugar and cinnamon; set aside.
  3. Lay peach slices in the bottom of the pan.
  4. To make the crumble, melt butter and mix with flour, brown sugar, salt, and cinnamon.
  5. For the cake batter, cream butter and oil together. Add sugar, then mix in the egg, sour cream, and vanilla.
  6. In a separate bowl, mix dry ingredients, then add them to the wet mixture, alternating with milk.
  7. Pour the batter over the peaches, sprinkle the crumble on top, and bake for 42 to 49 minutes.
  8. For whipped cream, beat cold heavy cream with powdered sugar and vanilla until stiff peaks form.
  9. Cool the cake for 10 minutes, then invert onto a plate and serve with whipped cream.

Notes

Serve warm or at room temperature. Store leftovers in an airtight container for 3-4 days. Reheat gently if desired.
