Description

Peach Cobbler Muffins are a delicious twist on a classic dessert, bursting with sweet peach goodness and perfect for breakfast or dessert.

  • 1 cup sour cream
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh peaches, diced
  • 1/2 cup all-purpose flour (for crumble topping)
  • 1/4 cup brown sugar, packed (for crumble topping)
  • 1/4 cup granulated sugar (for crumble topping)
  • 1 tsp cinnamon (for crumble topping)
  • 1/4 cup unsalted butter, cold and cubed (for crumble topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease with cooking spray.
  2. In a large bowl, whisk together 2 cups flour, 1 cup sugar, 2 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp salt, and 1/2 tsp cinnamon.
  3. In a separate medium bowl, whisk together 1/4 cup melted butter, 1 cup sour cream, 2 eggs, and 1 tsp vanilla extract until smooth.
  4. Create a well in the dry ingredients, pour in the wet mixture, and fold gently to combine.
  5. Fold in 1 1/2 cups diced peaches.
  6. For the crumble topping, mix 1/2 cup flour, 1/4 cup brown sugar, 1/4 cup granulated sugar, and 1 tsp cinnamon. Add 1/4 cup cold, cubed butter and mix until crumbly.
  7. Fill the muffin tin with the batter and sprinkle with the crumble topping.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Let cool for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.

Notes
