Ingredients

  • 1 tsp cinnamon (for crumble)
  • 1/4 cup unsalted butter, cold and cubed (for crumble)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease with cooking spray.
  2. In a large bowl, whisk together 2 cups flour, 1 cup sugar, 2 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp salt, and 1/2 tsp cinnamon. Set aside.
  3. In a separate bowl, whisk together 1/4 cup melted butter, 1 cup sour cream, 2 eggs, 1 tsp vanilla extract, and 1/4 to 1/2 cup milk until smooth.
  4. Create a well in the dry ingredients, pour in the wet mixture, and gently fold together.
  5. Fold in 1 1/2 cups diced peaches.
  6. For the crumble topping, mix together 1/2 cup flour, 1/4 cup brown sugar, 1/4 cup granulated sugar, and 1 tsp cinnamon. Add 1/4 cup cold, cubed butter and mix until crumbly.
  7. Fill the muffin tin 3/4 full with batter and sprinkle crumble topping on each.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Let cool for 5 minutes in the tin before transferring to a wire rack. Serve warm or at room temperature.

Notes

These muffins pair well with a cup of coffee or tea. Store in an airtight container for up to three days or freeze for up to three months.
