Peach Cobbler Cupcakes combine the flavors of classic peach cobbler with the fun of cupcakes, topped with creamy frosting and crunchy crumble.

- 1 box vanilla cake mix
- 1 cup water
- 1/3 cup unsalted butter, softened
- 3 large eggs
- 2 cups unsalted butter, softened (for frosting)
- 4 1/2 cups powdered sugar
- 2 teaspoons vanilla extract
- 3 tablespoons heavy whipping cream
- 21 ounces peach pie filling
- 1/2 cup light brown sugar
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon kosher salt
- 1 3/4 cup all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
- In a large bowl, mix the vanilla cake mix, water, softened butter, and eggs until everything is well combined.
- Fill each cupcake liner about 2/3 full with the batter and bake for about 19 minutes. Once done, let them cool on a wire rack.
- To make the frosting, beat together the softened butter, powdered sugar, heavy whipping cream, and vanilla extract until the mixture is smooth.
- Prepare the crumble by baking the all-purpose flour in the oven for about 5 minutes. After cooling, combine this flour with light brown sugar, granulated sugar, cinnamon, salt, and melted butter. Mix until you get a crumbly texture.
- Once the cupcakes are cooled, pipe the frosting on top, add pieces of peach filling, and sprinkle the crumble on top.
Notes
Allow the cupcakes to cool completely before frosting to prevent melting. Experiment with toppings like crushed graham crackers for added texture.
