Ingredients

  • 1 cup graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 4 tablespoons unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • 1/4 cup sour cream
  • 2 ripe peaches, peeled and diced
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup all-purpose flour
  • 1/4 cup rolled oats (optional)
  • Whipped cream for garnish
  • Cinnamon for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix the graham cracker crumbs, sugar, and melted butter until combined. Press about 1 tablespoon of the mixture into the bottom of each liner to form the crust. Bake for 5-7 minutes until lightly golden, then set aside to cool.
  3. In a large bowl, beat the softened cream cheese and sugar until smooth. Add vanilla extract, egg, and sour cream. Continue beating until creamy and well combined.
  4. Spoon the cheesecake mixture over the cooled crusts, filling each cup about 3/4 full.
  5. In a separate bowl, combine diced peaches, brown sugar, cinnamon, nutmeg, melted butter, flour, and oats (if using). Stir until peaches are well coated and topping has a crumbly texture.
  6. Spoon a generous amount of the peach mixture over the cheesecake in each cup.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheesecake is set and topping is golden.
  8. Remove from the oven and let cool completely in the pan, then chill in the refrigerator for at least 2 hours before serving.
  9. Top each cheesecake cup with whipped cream and a sprinkle of cinnamon. Enjoy!

Notes

For best flavor, use ripe peaches. Adjust sugar in the peach topping to taste. Can be made up to two days in advance.
