- 2 1/2 cups graham cracker crumbs
- 2 tablespoons granulated sugar
- 1/4 cup unsalted butter, melted
- 1/2 cup light brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon kosher salt
- 1/2 cup unsalted butter, melted
- 1 1/4 cups all-purpose flour
- 24 ounces cream cheese, softened
- 3/4 cup granulated sugar
- 1 tablespoon cornstarch
- 2 large eggs (room temperature)
- 2 teaspoons pure vanilla extract
- 21-ounce can peach pie filling
Instructions
- Preheat oven to 325°F (160°C). Line a 9-inch springform pan with parchment paper and spray the sides with non-stick spray.
- Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press into the bottom of the pan and freeze.
- For the crumble topping, mix brown sugar, granulated sugar, cinnamon, salt, melted butter, and flour until crumbly. Set aside.
- Beat cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well, then add vanilla extract. Pour into the prepared crust.
- Place a baking dish of hot water on the bottom rack of the oven. Bake for 45 minutes.
- Spoon peach pie filling on top, sprinkle crumble topping, and bake for another 10 minutes.
- Turn off the oven, leave the cheesecake inside for 20 minutes, crack the door, and let it sit for another 20 minutes. Cool on a rack and refrigerate for at least 12 hours.
- Slice and serve plain, with whipped cream, extra peach slices, or caramel sauce on top.
Notes
Make sure cream cheese is at room temperature for a smoother texture. Consider using fresh peaches when in season.
