- 1 1⁄2 cups all-purpose flour
- 1 tsp baking powder
- 1⁄2 tsp baking soda
- 1⁄4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp pure vanilla extract
- 1 cup plain Greek yogurt (full-fat or 2%)
- 1 cup fresh peaches, diced
- 3/4 cup fresh blueberries
- 1 tbsp flour (for coating the fruit)
- Powdered sugar, for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line an 8-inch round or square cake pan with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Add the flour mixture in two additions, alternating with the Greek yogurt. Mix until just combined—do not overmix.
- Toss the diced peaches and blueberries in 1 tbsp of flour to prevent them from sinking in the batter. Gently fold the fruit into the batter.
- Spread the batter evenly in the prepared pan. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. If desired, dust with powdered sugar before serving.
Notes
Serve on its own or with vanilla ice cream, whipped cream, or honey. Store in an airtight container at room temperature for up to 2 days or in the fridge for about a week.
