- 4 cups Fresh Peaches, peeled and sliced
- 3 cups Fresh Blueberries
- 1/2 cup Granulated Sugar
- 3 tablespoons Cornstarch
- Juice and Zest of 1/2 Lemon
- 1 teaspoon Vanilla Extract
- 1/2 teaspoon Ground Cinnamon
- Pinch of Salt
- 1 1/3 cups All-Purpose Flour
- 1/4 cup Granulated Sugar
- 2 teaspoons Baking Powder
- 1/2 teaspoon Salt
- 1/2 cup Cold Unsalted Butter, cubed
- 2/3 cup Buttermilk
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or cooking spray.
- In a large bowl, gently toss together the sliced peaches, blueberries, 1/2 cup sugar, cornstarch, lemon juice and zest, vanilla extract, cinnamon, and a pinch of salt; let sit for at least 10 minutes.
- In a separate bowl, whisk together the flour, 1/4 cup sugar, baking powder, and 1/2 teaspoon salt. Add the cold cubed butter, mixing until it resembles coarse crumbs.
- Pour in the buttermilk and stir until the dough just comes together; avoid overmixing.
- Pour the fruit filling into the prepared baking dish, covering it evenly with the cobbler topping.
- Bake for 40-50 minutes until the topping is golden brown and the fruit bubbles.
- Let cool for 15-20 minutes before serving.
Notes
Serve warm with a scoop of vanilla ice cream or whipped cream. Store leftovers in an airtight container in the refrigerator for 3 to 4 days.
