Description

Ingredients

  • 12 oz short pasta (penne, fusilli, or farfalle)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 4 cups fresh spinach
  • 1 cup marinated artichoke hearts, chopped
  • 1 cup feta cheese, crumbled
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sauté until translucent.
  3. Add the fresh spinach and cook until wilted.
  4. Stir in the chopped artichoke hearts and cooked pasta.
  5. Add crumbled feta cheese, salt, and pepper. Mix well and cook for another 2-3 minutes until heated through.
  6. Serve warm.

Notes

Garnish with extra crumbled feta or black pepper. Pairs well with green salad or crusty bread.
