Ingredients

- 12 oz short pasta (penne, fusilli, or farfalle)
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 4 cups fresh spinach
- 1 cup marinated artichoke hearts, chopped
- 1 cup feta cheese, crumbled
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sauté until translucent.
- Add the fresh spinach and cook until wilted.
- Stir in the chopped artichoke hearts and cooked pasta.
- Add crumbled feta cheese, salt, and pepper. Mix well and cook for another 2-3 minutes until heated through.
- Serve warm.
Notes
Garnish with extra crumbled feta or black pepper. Pairs well with green salad or crusty bread.
