Delicious Oreo Cheesecake Bars that combine rich cheesecake flavor with crunchy Oreo goodness.

- 2 cups crushed Oreo cookies (about 24 cookies)
- 4 tablespoons unsalted butter, melted
- 2 (8-ounce) packages cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup chopped Oreo cookies
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- In a medium bowl, combine the crushed Oreos and melted butter. Press this mixture into the bottom of the pan to form the crust.
- In a large bowl, beat the cream cheese and sugar until smooth.
- Add the vanilla extract and eggs one at a time, blending on low speed after each addition.
- Fold in the chopped Oreo cookies.
- Pour the filling over the crust and bake for 30-35 minutes until set.
- Allow the bars to cool completely, then refrigerate for at least 4 hours.
- For the ganache, heat the heavy cream in a small saucepan. Pour it over the chocolate chips and whisk until smooth.
- Drizzle the ganache over the chilled bars. Garnish with crushed Oreos.
- Lift the bars using the parchment paper and cut into squares before serving.
Notes
Serve chilled, topped with whipped cream or a scoop of vanilla ice cream for extra indulgence.
