Oreo Brownie & S’mores Ice Cream Cake

Ingredients

  • 1/2 cup unsalted butter
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup crushed Oreo cookies
  • 1/2 gallon Tillamook Fireside S’mores Ice Cream
  • 1 1/22 cups mini marshmallows
  • 1/2 cup crushed graham crackers
  • 1/4 cup heavy cream
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Spray the bottom of a 9-inch springform pan with non-stick spray.
  2. Melt the butter in a skillet over medium-low heat. Add the cocoa powder and mix. Allow it to cool for about 10 minutes.
  3. Whisk sugar into the cocoa mixture. Then, add the eggs one at a time, mixing well. Finally, stir in the vanilla extract.
  4. In another bowl, mix the flour, baking powder, and salt. Slowly whisk this dry mixture into the cocoa mixture. Fold in the crushed Oreo cookies.
  5. Spoon the batter into the prepared pan and bake for 20-25 minutes, or until a toothpick inserted comes out with just a few crumbs.
  6. Once baked, remove from the oven and let the brownies cool completely.
  7. Let the ice cream sit at room temperature for 20 minutes until softened. Spread the softened ice cream over the cooled brownie crust.
  8. Top with mini marshmallows and crushed graham crackers. Freeze for at least 4 hours or overnight to set.
  9. Heat the heavy cream in the microwave for 30 seconds until steaming. Stir in the chocolate chips and let sit for 1 minute before stirring until smooth and shiny.
  10. Carefully remove the outer ring of the springform pan and drizzle the ganache over the ice cream cake.
  11. Slice and serve. Enjoy!

Notes

For the best experience, slice with a warm knife. Store leftovers tightly covered in the freezer. Can last up to two weeks.
