- 1/2 cup unsalted butter
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup crushed Oreo cookies
- 1/2 gallon Tillamook Fireside S’mores Ice Cream
- 1 1/2 – 2 cups mini marshmallows
- 1/2 cup crushed graham crackers
- 1/4 cup heavy cream
- 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Spray the bottom of a 9-inch springform pan with non-stick spray.
- Melt the butter in a skillet over medium-low heat. Add the cocoa powder and mix. Allow it to cool for about 10 minutes.
- Whisk sugar into the cocoa mixture. Then, add the eggs one at a time, mixing well. Finally, stir in the vanilla extract.
- In another bowl, mix the flour, baking powder, and salt. Slowly whisk this dry mixture into the cocoa mixture. Fold in the crushed Oreo cookies.
- Spoon the batter into the prepared pan and bake for 20-25 minutes, or until a toothpick inserted comes out with just a few crumbs.
- Once baked, remove from the oven and let the brownies cool completely.
- Let the ice cream sit at room temperature for 20 minutes until softened. Spread the softened ice cream over the cooled brownie crust.
- Top with mini marshmallows and crushed graham crackers. Freeze for at least 4 hours or overnight to set.
- Heat the heavy cream in the microwave for 30 seconds until steaming. Stir in the chocolate chips and let sit for 1 minute before stirring until smooth and shiny.
- Carefully remove the outer ring of the springform pan and drizzle the ganache over the ice cream cake.
- Slice and serve. Enjoy!
Notes
For the best experience, slice with a warm knife. Store leftovers tightly covered in the freezer. Can last up to two weeks.
