Description

A delicious dessert that combines rich brownies, creamy ice cream, and the fun flavors of s’mores, perfect for parties and gatherings.


Ingredients

  • 1/2 cup unsalted butter
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup crushed Oreo cookies
  • 1/2 gallon Tillamook Fireside S’mores Ice Cream
  • 1 1/22 cups mini marshmallows
  • 1/2 cup crushed graham crackers
  • 1/4 cup heavy cream
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and spray a 9-inch springform pan with non-stick spray.
  2. Melt the butter in a skillet over medium-low heat. Mix in the cocoa powder and let it cool for 10 minutes.
  3. Whisk the sugar into the cocoa mixture. Then, add the eggs one at a time, followed by the vanilla extract.
  4. In another bowl, combine the flour, baking powder, and salt. Slowly whisk this into the cocoa mixture and gently fold in the crushed Oreos.
  5. Pour the batter into the prepared pan and bake for 20-25 minutes or until a toothpick comes out with just a few crumbs. Allow it to cool completely.
  6. Let the ice cream sit at room temperature for about 20 minutes to soften, then spread it over the cooled brownie crust.
  7. Top with mini marshmallows and crushed graham crackers, then freeze for at least 4 hours until it’s set.
  8. For the ganache, heat the heavy cream in the microwave until steaming. Stir in the chocolate chips, let it sit for a moment, and then stir until smooth.
  9. Remove the outer ring from the springform pan and drizzle the ganache over the ice cream cake.
  10. Slice and serve!

Notes

Store any leftovers in the freezer for up to a week. Cover well to prevent freezer burn.
