- 1/2 cup unsalted butter
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup crushed Oreo cookies
- 1/2 gallon Tillamook Fireside S’mores Ice Cream
- 1 1/2 – 2 cups mini marshmallows
- 1/2 cup crushed graham crackers
- 1/4 cup heavy cream
- 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and spray a 9-inch springform pan with non-stick spray.
- Melt the butter in a skillet over medium-low heat. Mix in the cocoa powder and let it cool for 10 minutes.
- Whisk the sugar into the cocoa mixture. Then, add the eggs one at a time, followed by the vanilla extract.
- In another bowl, combine the flour, baking powder, and salt. Slowly whisk this into the cocoa mixture and gently fold in the crushed Oreos.
- Pour the batter into the prepared pan and bake for 20-25 minutes or until a toothpick comes out with just a few crumbs. Allow it to cool completely.
- Let the ice cream sit at room temperature for about 20 minutes to soften, then spread it over the cooled brownie crust.
- Top with mini marshmallows and crushed graham crackers, then freeze for at least 4 hours until it’s set.
- For the ganache, heat the heavy cream in the microwave until steaming. Stir in the chocolate chips, let it sit for a moment, and then stir until smooth.
- Remove the outer ring from the springform pan and drizzle the ganache over the ice cream cake.
- Slice and serve!
Notes
Store any leftovers in the freezer for up to a week. Cover well to prevent freezer burn.
