Description

A delightful dessert that layers fudgy brownies with creamy S’mores ice cream, topped with a crunchy mix of graham crackers and marshmallows.


Ingredients

  • 1/2 cup unsalted butter
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup crushed Oreo cookies
  • 1/2 gallon Tillamook Fireside S’mores Ice Cream
  • 1 1/22 cups mini marshmallows
  • 1/2 cup crushed graham crackers
  • 1/4 cup heavy cream
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Spray the bottom of a 9-inch springform pan with non-stick spray.
  2. Melt the butter in a skillet over medium-low heat, then mix in the cocoa powder and let it cool for 10 minutes.
  3. Whisk the sugar into the cocoa mixture, then add the eggs one at a time, and finally whisk in the vanilla extract.
  4. In another bowl, combine the flour, baking powder, and salt. Slowly whisk this dry mixture into the cocoa mixture. Fold in the crushed Oreos.
  5. Spoon the brownie batter into the prepared pan and bake for 20-25 minutes, or until a toothpick inserted comes out with just a few crumbs.
  6. Remove from the oven and let the brownies cool completely.
  7. Let the ice cream sit at room temperature for 20 minutes to soften.
  8. Spread the softened ice cream over the cooled brownie crust.
  9. Top with mini marshmallows and crushed graham crackers.
  10. Freeze the cake for at least 4 hours or overnight until set.
  11. Heat the heavy cream in the microwave for 30 seconds or until steaming. Stir in the chocolate chips. Let it sit for 1 minute before stirring until smooth and shiny.
  12. Carefully remove the outer ring of the springform pan and drizzle the ganache over the ice cream cake.
  13. Slice and serve. Enjoy!

Notes

Make sure the brownies are fully cooled before adding the ice cream layer to prevent melting.
