Delightful cupcakes that blend the tangy flavors of orange and pineapple, topped with a rich cream cheese frosting.


Ingredients

  • 1/3 cup sugar (65 g)
  • 1/2 tsp vanilla extract
  • 3 tbsp orange juice
  • 12 tsp orange zest
  • 2 large eggs
  • 2 cups all-purpose flour (250 g)
  • 1/4 tsp salt
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 8 oz can crushed pineapple, including juice
  • 8 oz cream cheese, softened (227 g)
  • 1/2 cup butter, softened (113 g)
  • 2 cups confectioner’s sugar (400 g)
  • Pinch of salt
  • 1/2 tsp vanilla extract
  • 1/4 cup chopped pecans (30 g) (optional)

Instructions

  1. Preheat the oven to 350°F (180°C) and line 12 muffin cups with paper liners.
  2. In a medium bowl, whisk together flour, salt, baking powder, and baking soda. Set aside.
  3. Juice and zest the oranges. Combine the orange juice with the pineapple juice from the canned pineapple.
  4. In a large mixing bowl, whisk together the oil, sugar, vanilla extract, orange juice, orange zest, pineapple juice, and eggs until well combined.
  5. Gradually add the flour mixture, one cup at a time, whisking just until combined. Fold in the crushed pineapple.
  6. Divide the batter evenly among the 12 muffin cups and bake for 20-23 minutes, or until the tops are springy.
  7. Let the cupcakes cool for about 45 minutes before frosting.
  8. In a separate bowl, cream the softened cream cheese and butter until smooth.
  9. Gradually add the confectioner’s sugar, mixing until fully incorporated. Mix in the vanilla extract and a pinch of salt.
  10. Frost the cooled cupcakes and top with chopped pecans if desired.

Notes

Serve fresh and sprinkle a little orange zest on top of the frosting for added flavor.
