Delightful cupcakes that blend the tangy flavors of orange and pineapple, topped with a rich cream cheese frosting.

- 5 tbsp oil (75 ml)
- 1/3 cup sugar (65 g)
- 1/2 tsp vanilla extract
- 3 tbsp orange juice
- 1–2 tsp orange zest
- 2 large eggs
- 2 cups all-purpose flour (250 g)
- 1/4 tsp salt
- 2 tsp baking powder
- 1/2 tsp baking soda
- 8 oz can crushed pineapple, including juice
- 8 oz cream cheese, softened (227 g)
- 1/2 cup butter, softened (113 g)
- 2 cups confectioner’s sugar (400 g)
- Pinch of salt
- 1/2 tsp vanilla extract
- 1/4 cup chopped pecans (30 g) (optional)
Instructions
- Preheat the oven to 350°F (180°C) and line 12 muffin cups with paper liners.
- In a medium bowl, whisk together flour, salt, baking powder, and baking soda. Set aside.
- Juice and zest the oranges. Combine the orange juice with the pineapple juice from the canned pineapple.
- In a large mixing bowl, whisk together the oil, sugar, vanilla extract, orange juice, orange zest, pineapple juice, and eggs until well combined.
- Gradually add the flour mixture, one cup at a time, whisking just until combined. Fold in the crushed pineapple.
- Divide the batter evenly among the 12 muffin cups and bake for 20-23 minutes, or until the tops are springy.
- Let the cupcakes cool for about 45 minutes before frosting.
- In a separate bowl, cream the softened cream cheese and butter until smooth.
- Gradually add the confectioner’s sugar, mixing until fully incorporated. Mix in the vanilla extract and a pinch of salt.
- Frost the cooled cupcakes and top with chopped pecans if desired.
Notes
Serve fresh and sprinkle a little orange zest on top of the frosting for added flavor.
