Ingredients

- 2 cups self-raising flour
- 1/2 cup almond meal
- 2 oranges (1 1/2 cups orange juice + zest)
- 1 cup sugar
- 1/2 cup olive oil
- 1 tsp vanilla (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
- In a large bowl, combine the self-raising flour and almond meal.
- In another bowl, whisk together the orange juice, orange zest, sugar, and olive oil.
- Mix the wet ingredients into the dry ingredients until just combined.
- Pour the batter into the prepared cake pan.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the whipped coconut frosting.
- Once the cake is cool, frost it with the whipped coconut frosting.
- Serve and enjoy!
Notes
Use fresh oranges for the best flavor. Do not over-mix the batter to maintain a light texture.
