Ingredients

  • 1/2 cup almond meal
  • 2 oranges (1 1/2 cups orange juice + zest)
  • 1 cup sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a large bowl, combine the self-raising flour and almond meal.
  3. In another bowl, whisk together the orange juice, orange zest, sugar, and olive oil.
  4. Mix the wet ingredients into the dry ingredients until just combined.
  5. Pour the batter into the prepared cake pan.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the cake is baking, prepare the whipped coconut frosting.
  8. Once the cake is cool, frost it with the whipped coconut frosting.
