One Pot Creamy Garlic Tuscan Chicken Pasta

Description

A delightful and easy one-pot dish combining tender chicken, al dente pasta, and a creamy garlic sauce.


Ingredients

  • 2 large chicken breasts, sliced
  • 1 tbsp olive oil
  • Salt & pepper, to taste
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, sliced
  • 8 oz penne pasta
  • 2 cups baby spinach
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Season chicken with salt and pepper and sear on both sides until golden brown, about 5-6 minutes. Remove and set aside.
  3. In the same pot, add minced garlic and sauté until fragrant.
  4. Stir in sun-dried tomatoes and cook for another minute.
  5. Add penne pasta and enough water or chicken broth to cover.
  6. Bring to a boil, then reduce heat, cover, and simmer until pasta is al dente.
  7. Stir in baby spinach, heavy cream, and Parmesan cheese until smooth.
  8. Return the chicken to the pot, let it heat through, then serve warm.

Notes

To make it dairy-free, use coconut cream or a dairy-free cream substitute and skip the cheese.
