A delightful and easy one-pot dish combining tender chicken, al dente pasta, and a creamy garlic sauce.
Ingredients

- 2 large chicken breasts, sliced
- 1 tbsp olive oil
- Salt & pepper, to taste
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, sliced
- 8 oz penne pasta
- 2 cups baby spinach
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
Instructions
- In a large pot, heat olive oil over medium heat.
- Season chicken with salt and pepper and sear on both sides until golden brown, about 5-6 minutes. Remove and set aside.
- In the same pot, add minced garlic and sauté until fragrant.
- Stir in sun-dried tomatoes and cook for another minute.
- Add penne pasta and enough water or chicken broth to cover.
- Bring to a boil, then reduce heat, cover, and simmer until pasta is al dente.
- Stir in baby spinach, heavy cream, and Parmesan cheese until smooth.
- Return the chicken to the pot, let it heat through, then serve warm.
Notes
To make it dairy-free, use coconut cream or a dairy-free cream substitute and skip the cheese.
