A simple, healthy, and satisfying meal featuring juicy sausage and colorful vegetables, perfect for busy weeknights.


Ingredients

  • 2 chicken or turkey sausages, sliced
  • 1 cup baby carrots
  • 1 cup diced potatoes (Yukon gold or russet)
  • 1/2 cup broccoli florets
  • 1/2 cup diced onion
  • 1/2 red bell pepper, sliced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt & pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Slice all your veggies and sausage into bite-sized pieces. Toss with olive oil, garlic powder, smoked paprika, salt, and pepper.
  2. Spread everything on a baking sheet and roast at 425°F (220°C) for 25–30 minutes, flipping halfway.
  3. Transfer to a bowl and toss, then sprinkle with chopped parsley.
  4. Optionally, drizzle with hot sauce or balsamic glaze for extra flavor.
  5. Serve as is or over rice or quinoa.

Notes

To store leftovers, let them cool completely before placing them in an airtight container. You can keep it in the refrigerator for up to 3–4 days or freeze for up to 2 months. Reheat before serving.
