Ingredients

  • 12 oz orecchiette pasta
  • 1 lb Italian sausage, casings removed
  • 3 cups spinach or kale, roughly chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/2 tsp Italian seasoning
  • 1/2 cup grated Parmesan cheese (plus extra for topping)
  • Salt & black pepper to taste
  • Optional: red pepper flakes for a kick

Instructions

  1. In a large deep skillet, heat olive oil over medium heat. Add sausage and cook until browned and crumbled. Remove and set aside.
  2. In the same skillet, add minced garlic and cook until fragrant (about 30 seconds).
  3. Add orecchiette and enough water to just cover. Season with salt. Bring to a boil, reduce to simmer, and cook uncovered, stirring occasionally, until pasta is al dente and water is mostly absorbed (about 10–12 minutes).
  4. Stir in greens and cooked sausage. Cook until wilted.
  5. Stir in Parmesan, Italian seasoning, and black pepper. Serve hot with extra cheese on top.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For vegetarian version, substitute sausage with plant-based alternative.
