- 1 cup cherry tomatoes, halved
Instructions
- Preheat your oven to 400°F (200°C).
- Season the chicken breasts with salt and black pepper.
- In a large oven-safe skillet, heat the olive oil over medium-high heat.
- Add the chicken breasts to the skillet and sear for about 5-7 minutes on each side until golden brown.
- Add the minced garlic and cherry tomatoes to the skillet, mixing them with the chicken.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Serve hot, garnished with additional cherry tomatoes if desired.
Notes
Make sure to sear the chicken well for a rich, golden color and flavor. Fresh cherry tomatoes enhance sweetness, but canned tomatoes can suffice. Experiment with herbs like thyme or oregano for extra flavor.
