Description

A simple yet impressive dish combining tender chicken breasts, cherry tomatoes, and garlic, all cooked in one pan for easy cleanup.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt and black pepper.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat.
  4. Add the chicken breasts to the skillet and sear for about 5-7 minutes on each side until golden brown.
  5. Add the minced garlic and cherry tomatoes to the skillet, mixing them with the chicken.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  7. Serve hot, garnished with additional cherry tomatoes if desired.

Notes

Make sure to sear the chicken well for a rich, golden color and flavor. Fresh cherry tomatoes enhance sweetness, but canned tomatoes can suffice. Experiment with herbs like thyme or oregano for extra flavor.
