An easy and delicious meal featuring flaky cod fillets and fluffy rice in a zesty lemon butter sauce, prepared in just one pan.


Ingredients

  • 2 cod fillets
  • 1 cup rice
  • 2 tablespoons butter
  • 1 lemon (juiced and zested)
  • 2 cups vegetable or chicken broth
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. In a large skillet, melt the butter over medium heat.
  2. Add minced garlic and sauté until fragrant.
  3. Stir in the rice and toast it for a minute.
  4. Pour in the broth, bring to a boil, then reduce to a simmer.
  5. Place the cod fillets on top of the rice, and squeeze the lemon juice over everything.
  6. Cover the skillet and cook for about 15-20 minutes, or until the rice is tender and the cod is cooked through.
  7. Garnish with lemon zest and chopped parsley before serving.

Notes

Use fresh cod for best flavor. Feel free to add vegetables like peas or spinach for extra nutrition.
