An easy and delicious meal featuring flaky cod fillets and fluffy rice in a zesty lemon butter sauce, prepared in just one pan.

- 2 cod fillets
- 1 cup rice
- 2 tablespoons butter
- 1 lemon (juiced and zested)
- 2 cups vegetable or chicken broth
- 2 cloves garlic (minced)
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large skillet, melt the butter over medium heat.
- Add minced garlic and sauté until fragrant.
- Stir in the rice and toast it for a minute.
- Pour in the broth, bring to a boil, then reduce to a simmer.
- Place the cod fillets on top of the rice, and squeeze the lemon juice over everything.
- Cover the skillet and cook for about 15-20 minutes, or until the rice is tender and the cod is cooked through.
- Garnish with lemon zest and chopped parsley before serving.
Notes
Use fresh cod for best flavor. Feel free to add vegetables like peas or spinach for extra nutrition.
