Ingredients

  • 1 lb boneless, skinless chicken breast, sliced
  • 12 oz fettuccine or penne pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup sweet chili sauce
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon honey
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons cream cheese
  • 1 tablespoon olive oil or butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Green onions or parsley (optional, for garnish)

Instructions

  1. Heat the olive oil or butter in a large deep skillet over medium-high heat.
  2. Season the sliced chicken with salt, pepper, Cajun seasoning, smoked paprika, and garlic powder. Add it to the skillet and cook for 5 to 6 minutes until browned and cooked through. Remove and set aside.
  3. In the same skillet, pour in the chicken broth, heavy cream, sweet chili sauce, and honey. Stir well, scraping up any browned bits from the pan.
  4. Bring the mixture to a low boil, then stir in the uncooked pasta. Reduce heat to medium, cover, and cook for 12 to 14 minutes, stirring occasionally until the pasta is tender and most of the liquid is absorbed. Add a splash of broth or water if needed.
  5. Lower the heat and stir in the cream cheese, Parmesan, and mozzarella. Mix until the sauce is smooth and creamy.
  6. Add the chicken back in and stir everything together until heated through.
  7. Serve hot, topped with chopped green onions or parsley if desired.

Notes

For extra heat, add more Cajun seasoning or some crushed red pepper flakes. You can use shrimp or sausage instead of chicken for a different flavor.
