Description

A flavorful and easy dish featuring creamy coconut milk and tangy lime, perfect for quick weeknight dinners.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 can (14 oz) coconut milk
  • Juice of 2 limes
  • Fresh cilantro, for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper.
  2. Add the chicken to the skillet and cook until browned on both sides, about 5-7 minutes per side.
  3. Remove the chicken and set it aside.
  4. In the same skillet, add garlic and ginger, and sauté for about 1 minute.
  5. Pour in the coconut milk and lime juice, and stir to combine.
  6. Return the chicken to the skillet, cover, and let it simmer for 15-20 minutes, or until the chicken is cooked through.
  7. Garnish with fresh cilantro before serving.

Notes
