- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 tablespoon garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 can (14 oz) coconut milk
- Juice of 2 limes
- Fresh cilantro, for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper.
- Add the chicken to the skillet and cook until browned on both sides, about 5-7 minutes per side.
- Remove the chicken and set it aside.
- In the same skillet, add garlic and ginger, and sauté for about 1 minute.
- Pour in the coconut milk and lime juice, and stir to combine.
- Return the chicken to the skillet, cover, and let it simmer for 15-20 minutes, or until the chicken is cooked through.
- Garnish with fresh cilantro before serving.
Notes
Serve with rice or quinoa for a complete meal. Adjust lime juice according to taste. Add vegetables for additional nutrition.
