Ingredients

  • 4 boneless, skinless chicken thighs or breasts
  • Salt and pepper, to taste
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cups chicken broth
  • 2 cups egg noodles (uncooked)
  • 3/4 cup heavy cream
  • 1/2 tsp onion powder
  • 1/4 tsp paprika
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken with salt, pepper, and garlic powder.
  2. Heat olive oil and 1 tbsp butter in a skillet over medium heat. Add chicken and sear for 4–5 minutes per side until golden. Remove and set aside.
  3. In the same pan, pour in chicken broth, add egg noodles, onion powder, and paprika. Stir and bring to a boil. Cover and reduce heat to simmer for 6–7 minutes.
  4. Stir in heavy cream and Parmesan. Add the remaining butter and mix until smooth.
  5. Place the chicken back into the skillet. Simmer uncovered for 5 more minutes until chicken is cooked through and sauce thickens.
  6. Sprinkle with chopped parsley and serve hot.

Notes

For a thicker sauce, let it simmer longer. Feel free to add vegetables like peas or spinach for added nutrition.
