- 4 bone-in, skin-on chicken thighs
- Salt and black pepper to taste
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 teaspoon Dijon mustard
- 1/2 teaspoon dried thyme
- 1/2 teaspoon onion powder
- 8 oz wide egg noodles
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Season the chicken thighs generously with salt and pepper.
- In a large cast iron skillet, heat olive oil over medium-high heat. Sear the chicken thighs, skin-side down first, for 5–6 minutes per side until deeply golden. Remove and set aside.
- In the same skillet, melt the butter. Add minced garlic and sauté for 30 seconds until fragrant.
- Stir in chicken broth, heavy cream, Dijon mustard, thyme, and onion powder. Bring to a gentle simmer.
- Return the seared chicken thighs to the skillet. Cover and reduce heat to low. Simmer for 20–25 minutes, or until chicken is cooked through and tender.
- Meanwhile, cook egg noodles according to package instructions. Drain and toss with a bit of butter.
- Add buttered noodles to the skillet, gently stirring to coat with the sauce. Spoon sauce over the chicken.
- Garnish with fresh parsley and serve hot.
Notes
For extra flavor, marinate the chicken in spices and herbs before cooking. You can also add vegetables like spinach or peas to the noodles for added nutrition.
