Ingredients

  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 tablespoons cornstarch
  • 2 large eggs
  • 1.5 cups evaporated milk
  • 1/2 cup unsalted butter, softened
  • 4 oz unsweetened baking chocolate, melted
  • 1 tablespoon vanilla extract

Instructions

  1. Preheat your oven to 325°F (163°C) and grease two 9-inch round cake pans.
  2. In a large bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed for 3-5 minutes until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Fold in the cooled melted chocolate.
  5. Add baking powder, baking soda, and salt to the mixture.
  6. Stir in the cornstarch.
  7. Gradually add the flour and evaporated milk alternately to the wet mixture.
  8. Stir in the vanilla extract.
  9. Divide the batter evenly between the prepared cake pans and bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  10. Allow the cakes to cool in their pans for 5 minutes before transferring to a wire rack to cool completely.

Notes

Best served with chocolate frosting or whipped cream. Can add fresh berries for a fruity touch.
