  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1/2 cup unsalted butter, softened (for frosting)
  • 1/2 cup creamy peanut butter (for frosting)
  • 3 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, ensuring each egg is fully incorporated. Stir in the vanilla extract.
  5. Gradually add the flour mixture to the creamed mixture, alternating with the buttermilk, beginning and ending with the flour mixture. Mix until just combined.
  6. Pour the batter into the prepared baking pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool completely in the pan on a wire rack before frosting.
  8. In a medium bowl, cream together the softened butter and peanut butter until smooth. Gradually add the powdered sugar, alternating with the milk, and continue beating until the frosting is light and fluffy. Stir in the vanilla extract.
  9. Spread the peanut butter frosting evenly over the cooled cake.
  10. Slice and serve the cake.

Notes

Serve at room temperature or slightly chilled. Store leftovers in an airtight container for up to three days.
