- 1 pre-baked pie crust
- 1/4 cup butter
- 1 cup sugar
- 1/4 cup flour
- 1/2 cup cocoa powder
- 2 cups milk
- 3 egg yolks
- 1 tsp vanilla extract
- 3 egg whites
- 1/4 tsp cream of tartar
- 1/2 cup sugar (for meringue)
Instructions
- Preheat the oven to 350°F (175°C).
- Melt the butter in a saucepan over medium heat.
- In a bowl, whisk together sugar, flour, and cocoa powder. Gradually add this mixture to the melted butter while stirring to avoid lumps.
- Slowly add the milk while stirring until the mixture is smooth. Cook for 5-7 minutes, stirring often, until it thickens and then remove from heat.
- In a separate bowl, whisk the egg yolks. Take a spoonful of the hot chocolate mixture and mix it with the yolks to temper them, then gradually stir the yolks back into the saucepan.
- Return the saucepan to heat and cook for another 2-3 minutes. Stir in the vanilla extract and then remove from heat.
- Pour the chocolate filling into the pre-baked pie crust.
- In a clean bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add the sugar and continue beating until stiff peaks form.
- Spread the meringue over the chocolate filling, sealing the edges well.
- Bake for 10-12 minutes, until the meringue is golden. Allow the pie to cool completely before serving.
Notes
Serve chilled or at room temperature. Can be topped with whipped cream or chocolate shavings for added decadence.
