  • 1 pre-baked pie crust
  • 1/4 cup butter
  • 1 cup sugar
  • 1/4 cup flour
  • 1/2 cup cocoa powder
  • 2 cups milk
  • 3 egg yolks
  • 1 tsp vanilla extract
  • 3 egg whites
  • 1/4 tsp cream of tartar
  • 1/2 cup sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Melt the butter in a saucepan over medium heat.
  3. In a bowl, whisk together the sugar, flour, and cocoa powder.
  4. Gradually add this mixture to the melted butter, stirring to avoid lumps.
  5. Slowly add the milk while stirring until the mixture is smooth.
  6. Cook for 5-7 minutes, stirring often, until the filling thickens.
  7. Remove from heat. In a separate bowl, whisk the egg yolks and add a spoonful of the hot chocolate mixture to temper them.
  8. Gradually stir the egg yolks into the saucepan.
  9. Return the saucepan to heat and cook for another 2-3 minutes.
  10. Stir in the vanilla extract and remove from heat.
  11. Pour the chocolate filling into the pre-baked crust.
  12. In a clean bowl, beat the egg whites and cream of tartar until soft peaks form.
  13. Add the sugar gradually and continue beating until stiff peaks form.
  14. Spread the meringue over the chocolate filling, making sure to seal the edges.
  15. Bake for 10-12 minutes, or until the meringue is golden brown.
  16. Allow the pie to cool completely before serving. Enjoy!

Notes

For added flavor, use high-quality cocoa powder. Make sure the meringue edges are sealed to prevent shrinkage.
