- 1 pre-baked pie crust
- 1/4 cup butter
- 1 cup sugar
- 1/4 cup flour
- 1/2 cup cocoa powder
- 2 cups milk
- 3 egg yolks
- 1 tsp vanilla extract
- 3 egg whites
- 1/4 tsp cream of tartar
- 1/2 cup sugar for meringue
Instructions
- Preheat your oven to 350°F (175°C).
- Melt the butter in a saucepan over medium heat.
- In a bowl, whisk together the sugar, flour, and cocoa powder.
- Gradually add this mixture to the melted butter, stirring well to avoid lumps.
- Slowly add the milk while stirring until the mixture is smooth.
- Cook this mixture for about 5-7 minutes, stirring often, until it thickens.
- Once thickened, remove the saucepan from heat.
- In a separate bowl, whisk the egg yolks and add a spoonful of the hot chocolate mixture to temper them.
- Gradually add the egg yolk mixture into the saucepan, stirring continuously.
- Return the saucepan to heat and cook for another 2-3 minutes.
- Stir in the vanilla extract and then remove from heat.
- Pour the chocolate filling into the pre-baked pie crust.
- In a clean bowl, beat the egg whites and cream of tartar together until soft peaks form.
- Add the sugar and continue beating until stiff peaks form.
- Spread the meringue over the chocolate filling, making sure to seal the edges.
- Bake in the oven for 10-12 minutes, or until the meringue is golden brown.
- Allow the pie to cool completely before serving.
Notes
Best served chilled or at room temperature. Consider adding whipped cream or fresh berries for extra indulgence.
