Ingredients

  • 1 pre-baked pie crust
  • 1/4 cup butter
  • 1 cup sugar
  • 1/4 cup flour
  • 1/2 cup cocoa powder
  • 2 cups milk
  • 3 egg yolks
  • 1 tsp vanilla extract
  • 3 egg whites
  • 1/4 tsp cream of tartar
  • 1/2 cup sugar for meringue

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter in a saucepan over medium heat.
  3. In a bowl, whisk together the sugar, flour, and cocoa powder.
  4. Gradually add this mixture to the melted butter, stirring well to avoid lumps.
  5. Slowly add the milk while stirring until the mixture is smooth.
  6. Cook this mixture for about 5-7 minutes, stirring often, until it thickens.
  7. Once thickened, remove the saucepan from heat.
  8. In a separate bowl, whisk the egg yolks and add a spoonful of the hot chocolate mixture to temper them.
  9. Gradually add the egg yolk mixture into the saucepan, stirring continuously.
  10. Return the saucepan to heat and cook for another 2-3 minutes.
  11. Stir in the vanilla extract and then remove from heat.
  12. Pour the chocolate filling into the pre-baked pie crust.
  13. In a clean bowl, beat the egg whites and cream of tartar together until soft peaks form.
  14. Add the sugar and continue beating until stiff peaks form.
  15. Spread the meringue over the chocolate filling, making sure to seal the edges.
  16. Bake in the oven for 10-12 minutes, or until the meringue is golden brown.
  17. Allow the pie to cool completely before serving.

Notes

Best served chilled or at room temperature. Consider adding whipped cream or fresh berries for extra indulgence.
