- 1 pre-baked pie crust
- 1/4 cup butter
- 1 cup sugar
- 1/4 cup flour
- 1/2 cup cocoa powder
- 2 cups milk
- 3 egg yolks
- 1 tsp vanilla extract
- 3 egg whites
- 1/4 tsp cream of tartar
- 1/2 cup sugar
Instructions
- Preheat oven to 350°F (175°C).
- Melt butter in a saucepan over medium heat.
- In a bowl, whisk together sugar, flour, and cocoa powder.
- Gradually add this mixture to the melted butter, stirring to avoid lumps.
- Slowly pour in the milk while stirring until the mixture is smooth.
- Cook for about 5-7 minutes, stirring often, until it thickens.
- Remove the saucepan from heat.
- In a separate bowl, whisk the egg yolks and add a spoonful of the hot chocolate mixture to temper.
- Gradually stir the tempered yolks back into the saucepan.
- Return the saucepan to the heat and cook for another 2-3 minutes.
- Stir in the vanilla extract and remove from heat.
- Pour the chocolate filling into the pre-baked pie crust.
- In a clean bowl, beat the egg whites and cream of tartar until soft peaks form.
- Gradually add sugar, continuing to beat until stiff peaks form.
- Spread the meringue over the chocolate filling, sealing the edges well.
- Bake in the oven for 10-12 minutes, until the meringue is golden.
- Allow the pie to cool completely before serving.
Notes
Serve chilled or at room temperature. Pairs well with whipped cream or vanilla ice cream.
