- 2 cups all-purpose flour, sifted
- 1 1/4 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 cup butter, softened
- 1 cup milk
- 1 teaspoon vanilla extract
- 2 eggs
- Chocolate frosting (optional):
- 1/2 cup butter or margarine
- 2/3 cup cocoa powder
- 3 cups powdered sugar
- 1/3 cup milk
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 8-inch x 2-inch baking pans and set aside.
- In a large mixing bowl, sift together the flour, sugar, baking powder, and salt.
- Add the softened butter, milk, and vanilla to the dry ingredients.
- Using a hand mixer, beat the mixture for 2 minutes, scraping down the sides of the bowl occasionally.
- Add the eggs to the batter and beat for 2 minutes more until combined.
- Pour the batter equally into the prepared pans.
- Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let the cakes cool in the pans for 10 minutes. Then, turn them out onto a cooling rack to cool completely.
- For the optional chocolate frosting, melt the butter in a bowl. Stir in the cocoa, then alternately add the powdered sugar and milk while beating on medium speed until you achieve a spreading consistency. Stir in the vanilla.
