Ingredients

  • 1 cup old-fashioned oats
  • 1 cup all-purpose flour
  • 3/4 cup brown sugar, packed
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2 cups chopped rhubarb (fresh or frozen)
  • 1/2 cup granulated sugar
  • 1 tbsp cornstarch
  • 1/4 cup water
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a medium bowl, mix oats, all-purpose flour, brown sugar, baking soda, and salt.
  3. Pour in the melted butter and stir until the mixture is crumbly.
  4. Press about two-thirds of this oat mixture into the bottom of your prepared baking pan to create a crust.
  5. In a saucepan over medium heat, combine the chopped rhubarb, granulated sugar, cornstarch, and water. Bring to a gentle boil, stirring often until the mixture thickens and the rhubarb softens (about 5-7 minutes).
  6. Remove the pan from heat and stir in the vanilla extract (and cinnamon if you’re using it).
  7. Pour the rhubarb mixture evenly over the crust in the pan.
  8. Sprinkle the remaining oat mixture over the rhubarb layer.
  9. Bake for 30–35 minutes, or until the top is golden brown and the filling is bubbling.
  10. Allow to cool completely before slicing into bars.

Notes

For a richer flavor, you can use brown butter instead of melted unsalted butter. Feel free to add other fruits like strawberries or apples to the rhubarb filling for added sweetness.
