Delightful crumble bars with a crunchy oat topping and sweet-tart rhubarb filling, perfect for any time of day.

- 1 cup old-fashioned oats
- 1 cup all-purpose flour
- 3/4 cup brown sugar, packed
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 2 cups chopped rhubarb (fresh or frozen)
- 1/2 cup granulated sugar
- 1 tbsp cornstarch
- 1/4 cup water
- 1 tsp vanilla extract
- 1/4 tsp cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
- In a medium bowl, mix oats, all-purpose flour, brown sugar, baking soda, and salt.
- Pour in the melted butter and stir until the mixture is crumbly.
- Press about two-thirds of this oat mixture into the bottom of your prepared baking pan to create a crust.
- In a saucepan over medium heat, combine the chopped rhubarb, granulated sugar, cornstarch, and water. Bring to a gentle boil, stirring often until the mixture thickens and the rhubarb softens (about 5-7 minutes).
- Remove the pan from heat and stir in the vanilla extract (and cinnamon if you’re using it).
- Pour the rhubarb mixture evenly over the crust in the pan.
- Sprinkle the remaining oat mixture over the rhubarb layer.
- Bake for 30–35 minutes, or until the top is golden brown and the filling is bubbling.
- Allow to cool completely before slicing into bars.
Notes
For a richer flavor, you can use brown butter instead of melted unsalted butter. Feel free to add other fruits like strawberries or apples to the rhubarb filling for added sweetness.
