- 1 cup unsalted butter, room temperature
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 3 cups old-fashioned oats
- 1 cup fresh cranberries, quartered
- 1 cup pecans, chopped
- 1 cup white chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until smooth and creamy.
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until fully combined. Stir in the oats, cranberries, pecans, and white chocolate chips.
- Drop about a tablespoon of dough onto an ungreased cookie sheet, spacing each mound of dough 2 inches apart.
- Bake for 10-12 minutes, or until the cookies start to brown around the edges.
- Allow the cookies to cool on a cooling rack before serving.
Notes
Store cookies in an airtight container at room temperature for up to one week, or refrigerate for up to two weeks.
