Description

Delicious oatmeal cookies with tart cranberries, crunchy pecans, and sweet white chocolate.


Ingredients

  • 1 cup unsalted butter, room temperature
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 3 cups old-fashioned oats
  • 1 cup fresh cranberries, quartered
  • 1 cup pecans, chopped
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until smooth and creamy.
  3. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until fully combined. Stir in the oats, cranberries, pecans, and white chocolate chips.
  6. Drop about a tablespoon of dough onto an ungreased cookie sheet, spacing each mound of dough 2 inches apart.
  7. Bake for 10-12 minutes, or until the cookies start to brown around the edges.
  8. Allow the cookies to cool on a cooling rack before serving.
