No-Fry Fried Ice Cream

A delightful dessert that captures the fun of traditional fried ice cream without frying, featuring creamy ice cream and a crunchy corn flake coating.


Ingredients

  • 2 1/2 cups Corn Flakes, crushed
  • 6 tablespoons unsalted butter
  • 1 teaspoon ground cinnamon
  • Cherry Chocolate Chunk ice cream (or your favorite flavor)
  • Fresh cherries (for topping)
  • Chocolate fudge (for topping)
  • 1 cup heavy whipping cream (for frosting)
  • 1/3 cup powdered sugar (for frosting)
  • 1/2 teaspoon vanilla extract (for frosting)

Instructions

  1. Crush the corn flakes by placing them in a ziplock bag, sealing it, and using a rolling pin to crush them into bits, or use a food processor.
  2. In a medium fry pan, melt the butter. Add the crushed corn flakes and ground cinnamon, sautéing for about 4 minutes until the mixture becomes crispy. Pour the toasted mixture into a shallow dish and allow it to cool completely.
  3. Line a muffin pan with plastic wrap. Scoop 3/4 to 1 cup of ice cream into each cavity of the muffin pan and freeze for about 30 minutes.
  4. Remove the muffin pan from the freezer and roll each ice cream ball in the cooled corn flake mixture, pressing the mixture firmly around the ice cream. Place the coated ice cream balls back into the muffin pan and freeze for an additional 20 minutes.
  5. To make the whipped cream frosting, add the heavy whipping cream to a stand mixer bowl and beat on medium speed until soft peaks form. Add powdered sugar and vanilla extract, increasing the speed to high until stiff peaks form.
  6. Place a chilled ice cream ball onto a small dish, pipe whipped cream frosting on top, drizzle with chocolate fudge, and top with a fresh cherry. Enjoy!
