- 1 1/2 cups graham cracker crumbs
- 6 tablespoons unsalted butter, melted
- 2 tablespoons granulated sugar (optional)
- 1 cup semi-sweet or dark chocolate chips
- 1/3 cup heavy cream
Instructions
- In a bowl, mix the graham cracker crumbs with melted butter and granulated sugar until well combined. Press this mixture into the bottom of a springform pan to create the crust.
- In a small saucepan, heat the heavy cream until it is just simmering. Remove from heat and add the chocolate chips, stirring until the mixture is smooth.
- Pour the chocolate mixture over the crust and spread it evenly.
- Refrigerate for at least 4 hours or until set.
- Slice and serve chilled.
Notes
Store any leftover cheesecake in the refrigerator covered with plastic wrap or in an airtight container. It will last about 3-4 days.
