- 25.5 mini Twix fingers
- 300g shortbread biscuits
- 80g salted or unsalted butter, melted
- 250ml double cream, cold
- 500g cream cheese, room temperature
- 100g thick ready-made caramel
- 120g icing sugar
- 120g thick ready-made caramel (for topping)
- 120g milk chocolate, broken into pieces
- 80ml double cream (for topping)
Instructions
- Prepare the base by crushing the shortbread biscuits and mixing with the melted butter. Press the mixture into the bottom of an 8” springform tin.
- In a mixing bowl, whip the cold double cream until soft peaks form.
- In a separate bowl, beat the cream cheese until smooth, then add the thick caramel and icing sugar, mixing until well combined.
- Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Pour the cheesecake filling over the biscuit base, smoothing the top.
- Chill in the refrigerator for at least 240 minutes until set.
- For the topping, heat the milk chocolate and double cream together until melted and combined.
- Once the cheesecake is set, drizzle the thick caramel over the top, followed by the chocolate ganache, and decorate with the mini Twix fingers.
