- 1 cup graham cracker crumbs
- 1 tbsp sugar
- 5 tbsp unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 2 tsp vanilla extract
- 1 cup heavy whipping cream
- Caramel sauce (store-bought or homemade)
- 6 oz semi-sweet chocolate, chopped
- 1/4 cup heavy cream
- Chopped pecans (for garnish)
- Mini chocolate chips (for garnish)
Instructions
- Prepare the Crust: Line 12 mini baking cups or use mini springform pans. Combine graham cracker crumbs and melted butter, then press this mixture into the bottom of each cup. Chill the crusts until set.
- Make the Cheesecake Filling: In a bowl, whisk together softened cream cheese, powdered sugar, and vanilla until smooth. Pour in the heavy whipping cream and mix until thick. Spoon the cheesecake filling into each crust and chill again.
- Prepare the Toppings: Melt the chopped chocolate with the heavy cream in a small saucepan, stirring until smooth to create a ganache.
- Assemble Mini Cheesecakes: Drizzle caramel sauce over each cheesecake. Then, top with the chocolate ganache and sprinkle with chopped pecans and mini chocolate chips for added flair.
- Chill and Serve: Refrigerate the completed mini cheesecakes until you’re ready to serve them.
