Description

A rich and creamy no-bake cheesecake that combines the delicious flavors of chocolate, caramel, and nuts, topped with a crunchy Oreo crust.


Ingredients

  • 5 tbsp unsalted butter, melted
  • 1 cup caramel bits
  • 2 tbsp heavy cream
  • Two 8 oz blocks cream cheese, softened
  • 1/2 cup sugar
  • 1/4 cup sour cream
  • 1 tsp lemon juice
  • 1 tsp vanilla extract
  • One 8 oz tub whipped topping
  • 2/3 cup semi-sweet chocolate bar (chopped) or high-quality chocolate chips
  • 1/2 cup heavy cream
  • 1/3 cup chopped pecans
  • Whipped topping and additional caramel sauce (optional)

Instructions

  1. Make the Crust: Pulse Oreo cookies in a food processor until they form fine crumbs. Mix with melted butter until well combined. Press the mixture into the bottom and sides of a pie plate. Set aside.
  2. Prepare the Caramel Sauce: In a microwave-safe bowl, combine caramel bits and heavy cream. Microwave in 30-second intervals, stirring between each interval, until smooth. Set aside.
  3. Make the Cheesecake Filling: In a stand mixer, beat cream cheese until smooth. Add sugar, sour cream, lemon juice, and vanilla extract. Mix until smooth. Gently fold in the whipped topping with a spatula. Spread half of the cheesecake mixture over the prepared crust. Drizzle 1/3 cup of caramel over the top, then spread the remaining cheesecake mixture evenly.
  4. Prepare the Chocolate Ganache: Heat heavy cream in a microwave-safe bowl until very hot but not boiling. Add chopped chocolate and cover the bowl with plastic wrap. Let sit for 3 minutes. Whisk until smooth, then pour over the cheesecake.
  5. Garnish & Chill: Top with chopped pecans and refrigerate the cheesecake for at least 6 hours or overnight. For extra indulgence, garnish with whipped topping, more caramel sauce, and pecan halves before serving.
