- 1 cup fresh strawberries, sliced
Instructions
- For the crust, mix graham cracker crumbs, melted butter, sugar, and vanilla extract in a bowl until well combined. Press into the bottom of a 9-inch springform pan. Chill in the refrigerator.
- For the cheesecake filling, beat the cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until creamy. Fold in whipped cream and chopped strawberries.
- Pour the cheesecake filling over the chilled crust, spreading it evenly. Refrigerate while preparing topping.
- For the strawberry crunch topping, combine crushed graham crackers, sliced almonds, sugar, and melted butter in a bowl. Mix until it resembles coarse crumbs.
- Spread strawberry slices over the cheesecake filling, then sprinkle strawberry crunch topping on top.
- Chill the cheesecake for at least 4 hours, or until set. Slice and serve chilled.
