- Two 8-ounce blocks cream cheese, softened
- 14-ounce can sweetened condensed milk
- 1 teaspoon vanilla paste (or vanilla extract)
Instructions
- Prepare the strawberries by removing and discarding the stems, then cutting them into bite-sized pieces. In a bowl, mix with granulated sugar, lemon zest, and lemon juice. Let sit for 15 minutes.
- For the graham cracker crust, pulse graham crackers in a food processor until they are fine crumbs, then mix with melted butter until moistened.
- In a large bowl, whip cream cheese, sweetened condensed milk, and vanilla paste with a mixer on medium-high speed until smooth.
- Assemble parfaits by layering cheesecake mixture, graham cracker crumbs, and macerated strawberries in a glass.
- Chill in the refrigerator for about 1 hour before serving.
