- Two 8-ounce blocks cream cheese, softened
- 14-ounce can sweetened condensed milk
- 1 teaspoon vanilla paste (or vanilla extract)
Instructions
- Prepare the strawberries: Remove and discard the stems from the strawberries, then cut them into bite-sized pieces. In a bowl, combine the strawberries with granulated sugar, lemon zest, and lemon juice. Stir well and let sit for 15 minutes to macerate.
- Make the graham cracker crust: Place graham crackers into a food processor and pulse into fine crumbs. Combine the crumbs with melted butter in a bowl and stir until evenly moistened.
- Prepare the cheesecake filling: In a large bowl, whip together the cream cheese, sweetened condensed milk, and vanilla paste with a hand mixer on medium-high speed for about 1 minute until smooth.
- Assemble the parfaits: In a glass, layer the cheesecake mixture, followed by the graham cracker crumbs, and then the macerated strawberries. Repeat the layers.
- Chill and serve: Refrigerate parfaits for about 1 hour before serving to meld the flavors.
Notes
Add a dollop of whipped cream and a fresh strawberry for decoration. Store leftovers in an airtight container for up to 3 days.
