This No-Bake Strawberry Cheesecake Cream Pie combines creamy cheesecake with fresh strawberries in a buttery graham cracker crust, making for a delightful summer dessert.

- 10 graham crackers, crushed into crumbs
- 6 tablespoons unsalted butter, melted
- 2 tablespoons granulated sugar
- 1 cup heavy whipping cream
- 1 1/4 cups powdered sugar, divided
- 8 ounces cream cheese, softened
- 1 teaspoon vanilla extract
- 12 ounces fresh strawberries, chopped
- 5 teaspoons gelatin, dissolved in 3 tablespoons water
- 1 cup heavy whipping cream (for topping)
- 1/4 cup powdered sugar (for topping)
- Extra strawberries for decoration
Instructions
- Prepare the Graham Cracker Crust by mixing crushed graham crackers, melted butter, and sugar. Press the mixture into the bottom and halfway up the sides of an 8-inch springform pan or a 9-inch pie pan. Refrigerate while preparing the filling.
- Dissolve the gelatin powder in cold water and let it bloom for a few minutes. Heat on low until melted, then set aside to cool.
- In a bowl, whip heavy cream until stiff peaks form, gradually adding 1/4 cup powdered sugar. In another bowl, mix cream cheese with the remaining 1 cup powdered sugar until fluffy. Add vanilla and the melted gelatin, mixing until smooth. Gently fold in chopped strawberries, then stir in the whipped cream.
- Pour the strawberry cheesecake filling into the crust and smooth it out. Refrigerate for at least 5 hours or until firm.
- Once firm, remove from the pan and whip together 1 cup heavy whipping cream and 1/4 cup powdered sugar until stiff peaks form. Decorate the border of the pie and add more strawberries on top if desired.
- Serve chilled. Store in the refrigerator until serving.
Notes
For a heavier strawberry flavor, feel free to add more chopped strawberries to the filling. Keep any leftover pie in the refrigerator for 3 to 4 days.
