Description

This No-Bake Strawberry Cheesecake Cream Pie combines creamy cheesecake with fresh strawberries in a buttery graham cracker crust, making for a delightful summer dessert.

  • 10 graham crackers, crushed into crumbs
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1 cup heavy whipping cream
  • 1 1/4 cups powdered sugar, divided
  • 8 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 12 ounces fresh strawberries, chopped
  • 5 teaspoons gelatin, dissolved in 3 tablespoons water
  • 1 cup heavy whipping cream (for topping)
  • 1/4 cup powdered sugar (for topping)
  • Extra strawberries for decoration

Instructions

  1. Prepare the Graham Cracker Crust by mixing crushed graham crackers, melted butter, and sugar. Press the mixture into the bottom and halfway up the sides of an 8-inch springform pan or a 9-inch pie pan. Refrigerate while preparing the filling.
  2. Dissolve the gelatin powder in cold water and let it bloom for a few minutes. Heat on low until melted, then set aside to cool.
  3. In a bowl, whip heavy cream until stiff peaks form, gradually adding 1/4 cup powdered sugar. In another bowl, mix cream cheese with the remaining 1 cup powdered sugar until fluffy. Add vanilla and the melted gelatin, mixing until smooth. Gently fold in chopped strawberries, then stir in the whipped cream.
  4. Pour the strawberry cheesecake filling into the crust and smooth it out. Refrigerate for at least 5 hours or until firm.
  5. Once firm, remove from the pan and whip together 1 cup heavy whipping cream and 1/4 cup powdered sugar until stiff peaks form. Decorate the border of the pie and add more strawberries on top if desired.
  6. Serve chilled. Store in the refrigerator until serving.

Notes

For a heavier strawberry flavor, feel free to add more chopped strawberries to the filling. Keep any leftover pie in the refrigerator for 3 to 4 days.
