  • 2 tablespoons granulated sugar
  • 1 cup heavy whipping cream
  • 1 1/4 cup powdered sugar, divided
  • 8 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 12 ounces fresh strawberries, chopped
  • 5 teaspoons gelatin, dissolved in 3 tablespoons water
  • 1 cup heavy whipping cream (for topping)
  • 1/4 cup powdered sugar (for topping)
  • Extra strawberries for decoration

Instructions

  1. Prepare the Graham Cracker Crust: In a bowl, combine crushed graham crackers, melted butter, and sugar using a fork. Press this mixture into the bottom and halfway up the sides of an 8-inch springform pan or a 9-inch pie pan. Refrigerate the crust while you prepare the filling.
  2. Prepare the Gelatin: Dissolve the gelatin powder in cold water and let it bloom for a few minutes. Heat it on low until completely melted, and then set aside to cool for a few minutes.
  3. Make the Strawberry Cheesecake Filling: In a bowl, whip the heavy cream until stiff peaks form, gradually adding 1/4 cup powdered sugar. In another large bowl, mix the softened cream cheese with the remaining 1 cup powdered sugar until fluffy. Add vanilla and the melted gelatin, mixing on low speed until smooth and well combined. Gently fold in the chopped strawberries, and then slowly stir in the whipped cream.
  4. Assemble the Pie: Pour the strawberry cheesecake filling into the graham cracker crust and smooth it out with a spatula. Refrigerate for at least 5 hours or until firm.
  5. Whipped Topping: Once firm, remove the cheesecake from the springform pan. For decoration, whip together 1 cup heavy whipping cream and 1/4 cup powdered sugar until stiff peaks form, and decorate the border of the pie. Add extra strawberries on top if desired.
