Instructions

  1. Prepare the Graham Cracker Crust: Combine crushed graham crackers, melted butter, and sugar in a bowl. Press into an 8-inch springform pan or a 9-inch pie pan. Refrigerate.
  2. Prepare the Gelatin: Dissolve gelatin in cold water, heat until melted, and set aside to cool.
  3. Make the Strawberry Cheesecake Filling: Whip heavy cream until stiff peaks, gradually adding 1/4 cup powdered sugar. In another bowl, mix cream cheese with remaining powdered sugar until fluffy, add vanilla and melted gelatin, mixing until smooth. Fold in chopped strawberries and whipped cream.
