- 12 ounces fresh strawberries, chopped
- 5 teaspoons gelatin, dissolved in 3 tablespoons water
- 1 cup heavy whipping cream (for topping)
- 1/4 cup powdered sugar (for topping)

Instructions
- Prepare the Graham Cracker Crust: Combine crushed graham crackers, melted butter, and sugar in a bowl. Press into an 8-inch springform pan or a 9-inch pie pan. Refrigerate.
- Prepare the Gelatin: Dissolve gelatin in cold water, heat until melted, and set aside to cool.
- Make the Strawberry Cheesecake Filling: Whip heavy cream until stiff peaks, gradually adding 1/4 cup powdered sugar. In another bowl, mix cream cheese with remaining powdered sugar until fluffy, add vanilla and melted gelatin, mixing until smooth. Fold in chopped strawberries and whipped cream.
- Assemble the Pie: Pour filling into the crust and smooth it. Refrigerate for at least 5 hours until firm.
- Whipped Topping: Whip together 1 cup heavy cream and 1/4 cup powdered sugar until stiff peaks form; decorate the pie and add extra strawberries.
