  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 teaspoon lemon zest
  • 2 teaspoons lemon juice
  • 1 (3 oz.) box strawberry gelatin
  • 6 tablespoons boiling water
  • 1 1/2 cups finely chopped strawberries

Instructions

  1. Make the Crust: In a food processor, combine the graham crackers and brown sugar. Process until finely ground. Slowly pour in the melted butter until the mixture resembles coarse sand.
  2. Prepare the Pan: Spray a 9-inch springform pan with nonstick cooking spray. Press the graham cracker mixture into the bottom and sides of the pan. Freeze for 20 minutes.
  3. Make the Filling: Whip the heavy cream and vanilla extract until stiff peaks form. In another bowl, beat the cream cheese until smooth, then add granulated sugar, powdered sugar, lemon zest, and lemon juice.
  4. Dissolve Gelatin: Whisk together the strawberry gelatin and boiling water until fully dissolved. Add this to the cream cheese mixture and beat until smooth. Fold in chopped strawberries.
  5. Combine with Whipped Cream: Gently fold in whipped cream with the cream cheese mixture until no streaks remain.
  6. Assemble the Cheesecake: Pour the filling into the crust, smooth the top, and refrigerate for at least 12 hours.
  7. Serve: Loosen the cheesecake from the pan, transfer to a serving platter, and slice to serve.

Notes

Make sure to use softened cream cheese for a smooth filling. Whip the cream until stiff peaks form for a light texture. Fresh strawberries are best, but frozen can be used.
